Awesome Onions
Our kitchen has about six recipes for grilled onions that are our “go to” recipe for various dishes depending on whether we want sweet, smoky, earthy, and so on.
This particular onion recipe works well on steak sandwiches and grilled burgers as it has a slightly sweet flavour that makes the underlying smokiness of the meat “pop.”
Ingredients
- 2 large "brown" onions yellow is fine too
- 30 g unsalted butter
- 50 g dark brown sugar
- 125 ml red wine vinegar
- 15 ml extra virgin olive oil

Instructions
- Peel the onions and slice in 1 cm thick half moons
- Place a large skillet over a medium flame, use one that has a tight fitting lid
- Add the olive oil to the skillet
- Add the brown sugar to the skillet, stir once or twice to distribute in to the olive oil
- Add the butter to the olive oil and sugar mixture
- Melt the butter in the skillet right to the point where it becomes brown butter
- Scatter the onions in the melted butter/oil/sugar mixture, making a single flat layer if possible
- Cook uncovered for about 5 minutes
- Add the red wine vinegar
- Put the lid on the skillet
- Reduce the flame to low
- Cook until the onions caramelise, reaching that nutty golden colour. Takes about 30 to 40 minutes.
- Don't stir the onions whilst cooking with the cover on, just let them be
Recipe Notes
If you use a hot onion, such as a Vidalia, or other sweet yellow, reduce the sugar a little as the onion itself will add considerable sweetness during the cooking
