Instructions
  1. Heat the oil in a wok over a medium-high flame
  2. Put the garlic in the hot oil
  3. Put the ginger in the hot oil
  4. Put the spring onions in the hot oil
  5. Stir fry until the garlic is lightly browned
  6. Add the chicken to the wok
  7. Stir fry for 5 minutes
  8. Add the water chestnuts to the wok
  9. Stir fry everything for another 3 minutes
  10. Add the soy sauce to the wok
  11. Add the rice wine (or dry sherry) to the wok
  12. Sprinkle the cornstarch over the top
  13. Stir-fry, coating the chicken with the cornstarch
  14. Stir-fry for around 5 minutes or so, until the chicken is thoroughly cooked through.
