Margherita pizza variation #2
This is a pretty simple Margherita pizza that uses limited ingredients. It is usually what I to throw together when at a friend’s house and working with a limited pantry inventory.

Ingredients
- 1 serving pizza dough
- 1 serving pizza sauce
- 1 cloves garlic crushed
- 125 g mozzarella cheese squeezed and coarsely torn
- 12 g Parmesan cheese shaved
- 15 ml extra virgin olive oil
- salt to taste
- pepper to taste
- fresh basil torn or chopped fine, for garnish

Instructions
- Preheat the oven to 220C/425F
- Lightly flour your work surface
- Flatten a serving of the pizza in to a rough disc using your hands
- You can either use a rolling pin to flatten out the pizza dough or toss it. If using a rolling pin, give the dough a quarter turn between each roll
- Place the pizza crust on lightly floured pizza peel or a baking/cookie sheet (one without a lip preferably)
- Spread out pizza sauce on the crust to about 2 cm (1 inch) from the edge
- Scatter the crushed garlic over the pizza sauce
- Top the pizza with the mozzarella cheese
- Sprinkle the Parmesan cheese evenly over the pizza
- Sprinkle a little salt and pepper to taste over the pizza
- Drizzle olive oil over the pizza. Go easy on this step, you aren't bathing your cat.
- Optionally, you can brush the edge of the pizza with olive oil
- Bake the pizza in the preheated oven for 10 to 12 minutes or until the cheese is melting and flowing together and the crust is suitably crispy underneath
- Garnish the pizza with your pizza with chopped or torn Basil leaves
